Note on sharpening: Given that these have higher edge retention and use hard Vanadium and Niobium carbides, part of what gives them their exceptional performance, they will sharpen best with harder abrasives like diamonds or CBN.  Oilstones and basic waterstones are not recommended although ceramic waterstones, such as Shapton do work, just not as fast as diamonds.
